  3. 1 small yellow onion, finely chopped
  4. 2 cloves garlic, minced
  5. 1/2 cup tomato sauce
  6. 2 cups chicken or vegetable broth
  7. 1 teaspoon ground cumin
  8. 1/2 teaspoon paprika
  9. Salt to taste
  10. Optional: diced bell peppers, peas, chopped cilantro

Instructions

  • Heat the vegetable oil in a large skillet over medium heat.
  • Add the rice and toast, stirring frequently, until it turns golden brown.
  • Stir in the chopped onion and garlic, and sauté for 2 minutes until fragrant.
  • Pour in the tomato sauce, broth, cumin, paprika, and salt. Mix well.
  • Bring the mixture to a gentle boil, then reduce the heat to low and cover the skillet.
  • Let the rice simmer for 18-20 minutes or until the liquid is absorbed.
  • Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork before serving.
