Ingredients
Scale
Main Ingredients
- 1 lb elbow macaroni (or any pasta of your choice)
- 2 cups shredded cheddar cheese
- 1 ½ cups shredded smoked gouda cheese
- 1 ½ cups milk (whole milk or 2%)
- 1 cup heavy cream
- 4 tbsp unsalted butter
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp mustard powder
- 1 tsp paprika
- Salt and pepper, to taste
Optional Add-ins
- ½ cup crispy bacon bits
- ½ cup panko breadcrumbs for a crispy topping
- 1 tbsp fresh parsley (for garnish)
Instructions
- Prepare the Pasta
First, cook the pasta according to the package instructions, but undercook it by about 2 minutes. Drain and set aside. Tip: You want it slightly firm so it holds up during smoking. - Prepare the Cheese Sauce
In a large saucepan, melt butter over medium heat. Once melted, add the garlic powder, onion powder, mustard powder, paprika, salt, and pepper. Stir to combine and let it cook for about 1 minute. - Add the Milk and Cream
Slowly pour in the milk and heavy cream while stirring continuously. Let it simmer on low for 5-7 minutes until it thickens. Once thickened, stir in the cheddar and smoked gouda cheese until fully melted and smooth. - Combine with Pasta
Add the cooked pasta to the cheese sauce, stirring gently to coat all the pasta. If you like, you can mix in crispy bacon bits at this point for extra flavor. - Prepare the Smoker
Preheat your smoker to 225°F. Once heated, transfer your mac and cheese into a heat-safe dish. You can top it with breadcrumbs for a crispy texture if desired. - Smoke the Mac and Cheese
Place the dish in the smoker and smoke for 1 to 1.5 hours. Stir halfway through to ensure the cheese sauce remains smooth and creamy. - Serve and Enjoy!
Once smoked, remove from the smoker and garnish with fresh parsley if you like. Serve immediately and enjoy the smoky, cheesy goodness!
Notes
- Substitutions: You can substitute the gouda cheese with any smoked cheese of your choice, such as smoked cheddar or mozzarella, to create your own unique flavor.
- For Extra Creaminess: Add more heavy cream or milk if the mac and cheese seems too thick after smoking.
- Make Ahead: You can prepare the mac and cheese the day before and refrigerate it. Simply reheat it in the smoker, covered with foil, before serving.
