  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cups mixed vegetables (carrots, zucchini, potatoes)
  • 1 lemon (sliced for garnish)
  • Fresh parsley for garnish

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken: Pat chicken breasts dry with a paper towel. Rub olive oil all over the chicken.
  3. Season the Chicken: Mix garlic powder, paprika, thyme, salt, and pepper in a small bowl. Sprinkle this seasoning evenly over both sides of the chicken.
  4. Add Vegetables: Arrange chicken and mixed vegetables on a baking tray. Drizzle a little olive oil over the vegetables and season with salt and pepper.
  5. Bake: Bake the chicken and vegetables for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  6. Rest: Remove from the oven and let the chicken rest for 5 minutes before serving.
  7. Serve: Garnish with lemon slices and fresh parsley, then serve hot.
