Ingredients
- 4 boneless chicken breasts (or thighs)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 cups mixed vegetables (carrots, zucchini, potatoes)
- 1 lemon (sliced for garnish)
- Fresh parsley for garnish
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Chicken: Pat chicken breasts dry with a paper towel. Rub olive oil all over the chicken.
- Season the Chicken: Mix garlic powder, paprika, thyme, salt, and pepper in a small bowl. Sprinkle this seasoning evenly over both sides of the chicken.
- Add Vegetables: Arrange chicken and mixed vegetables on a baking tray. Drizzle a little olive oil over the vegetables and season with salt and pepper.
- Bake: Bake the chicken and vegetables for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Rest: Remove from the oven and let the chicken rest for 5 minutes before serving.
- Serve: Garnish with lemon slices and fresh parsley, then serve hot.
