- 3 dried guajillo chiles
- 2 dried ancho chiles
- 1 white onion, quartered
- 4 garlic cloves
- 1 cinnamon stick

- 2 teaspoons oregano
- 2 bay leaves
- 6 cups beef broth
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
- For the Pizza Base:
- 1 pound pizza dough (store-bought or homemade)
- 1 cup birria consommé (from the prepared birria)
- 2 cups shredded mozzarella cheese
- 1 cup Oaxaca cheese (optional)
- Fresh cilantro, chopped
- Sliced onions or pickled onions for garnish
Instructions
- Prepare the Birria:
- Soak dried chiles in warm water. Blend with garlic, onion, and soaking liquid.
- Sear the beef, add chili paste, spices, and broth, and simmer until tender.
- Prepare the Dough:
- Roll out the pizza dough and brush it with reserved birria fat. Preheat the oven to 475°F (245°C).
- Assemble the Pizza:
- Spread consommé over the dough, add birria meat, and top with mozzarella and Oaxaca cheese.
- Bake the Pizza:
- Bake for 12–15 minutes, or until the crust is golden and the cheese is bubbly.
